This morning I woke up, thought it was Sunday, and almost went back to sleep when I realized that I had set my alarm for 6:45 am for a reason!
I brought oatmeal to work for breakfast 🙂 I topped it with crunchy peanut butter and banana, and also drank my usual cup of coffee. For lunch I had another homemade meal 🙂 I are a yummy cucumber salad with tomato, red onion, lemon, salt and black pepper. I also made a pita sandwich and filled it with herbed goat cheese, garlic hummus, and part of the cucumber salad. I also ate an apple! My lunch looked really colorful but I totally forgot to take a photo 😦 so instead, I took a picture of a few of my co-workers 🙂
After eating so much unnecessary candy last week, I vowed I wasn’t going to do it again this week! Instead, I brought my own snacks to eat. I have plantain chips, apple cinnamon rice cakes, high fiber granola, candied ginger, dried mango, and a protein bar in a drawer of my office cubicle. This afternoon, I snacked on a rice cake, a little granola, a few plantain chips, and candied ginger through out the afternoon. I know of lot of people out there have conflicting views on snacking. I believe in “everything in moderation.” As long as one isn’t overeating, it doesn’t matter how many times a day one eats!
After work I went on a six mile run around fresh pond. I meant to go a slower pace today, but ended up pushing myself a little harder than I had planned! It still felt pretty good (though it was tiring!).
For dinner, I made myself a smoothie and also had leftover chicken potstickers 🙂 I put kale, spinach, frozen mango and berries, banana, chia seeds, non fat plain Greek yogurt, and orange juice! I made enough to be able to bring some for lunch tomorrow 🙂 YAY.
