Today was my last Thursday in SLO 😦 Next week, I’ll be back on the East Coast! It’s going to be humid there, and I can’t say I’m particularly excited about that again. However, I’m looking forward to pretty much everything else that awaits me there (apartment, new job, old/new friends, gym, the Charles River, and more)!
This morning, Kiele and I went to morning Zumba with Kitty. I taught the first half of class (including the warm-up). And good thing I had planned on teaching the warm-up because Kitty had accidentally left her iPod at home and thus was a running a few minutes behind. Happens to everyone! Earlier this summer I almost left the house without running shoes on my way to the gym. Now that wouldn’t have turned out very well! Kitty has been such a wonderful mentor to me that I am not looking forward to saying bye to her (or Denise). As I mentioned in a previous post, I am working on my AFAA Group Exercise Certification. Today Kitty brought me a bunch of materials (a textbook, study guide, and notes) to help me prepare for the exam. She only asked that I pay it forward and share the material with a future AFAA instructor. I look forward to the day that I become a mentor to someone else and help them on their way to becoming a group fitness instructor! 🙂
Once class ended, my mom and I headed to the grocery store and then made our way home. I had eaten a peach immediately after class because I knew we were going to be running some errands, but we fixed up a breakfast as soon as we put away the groceries. We were both craving different meals so she fixed herself up some hardboiled eggs and I made myself a yogurt parfait. I used 1/2 cup of non-fat plain Greek yogurt, 1/2 cup of Honey, Almond & Flax 9 Whole Grain Crunch Cereal, 1/2 banana, 1/2 cup of blueberries, and 1 teaspoon of crunchy peanut butter! I loved it 🙂 I think it could also taste great with strawberries instead of blueberries and almond butter instead of peanut butter. There are a lot of wonderful possibilities also using different cereals and even other fruits!
For lunch, I fixed us up this salad that I’ve decided to call Balsamic Chicken Arugula Salad (click for the recipe!). It consisted of an arugula base, chicken with a balsamic marinade (from Trader Joe’s), sweet & spicy pecans, goat cheese, sun dried tomatoes, avocado, quinoa, and a light homemade dressing (orange olive oil, fig balsamic vinegar, whole grain mustard, red chili pepper flakes, black pepper & salt). Along with our food, we drank unsweetened jasmine green iced tea!
This afternoon, both Danielle and Kiele joined me for Zumba with Denise! We another very fun class 🙂 Afterwards, I headed to Danielle’s house to shower and get ready for dinner. The three of us made plans to go to Farmer’s Market for the evening in downtown SLO. Looks like I found myself back downtown before leaving after all!
We had planned on going to Jaffa Cafe for dinner but it was already closed by the time we were ready to go downtown. Instead, we went to Creeky Tiki. There we ordered dinner and drink. I had the beet and goat cheese salad with marinated shrimp! It was delicious! 🙂 We started out sitting at a table but then migrated to a booth near a window when space opened up. We spent the whole night laughing and having a ton of fun hanging out and talking about funny times in high school and college. It was a great evening! I’m going to miss them both when I leave! Luckily, Danielle is also headed out East in a couple months so I’ll actually be able to see her more frequently 🙂
