Sometimes there are days when you don’t really feel like going anywhere. That was the case for me today. The only two exceptions I made were for working out. I left the house in the morning to go on a faster paced 4 mile run with my friend, Derek (trying to work on my speed for the half-marathon). The second time I left was in the late afternoon/early evening to go to Body Combat.
Since I woke up early (7:30 am), I was feeling pretty hungry by 10 am, but didn’t want to eat too much before my run. I decided to eat a yellow saturn peach and some plain High Fiber Joe’s O’s (nothing too heavy, but still nutritious and filling). After my run, I drank a kale smoothie that my mom had prepared for us. It contained Kale (as the name suggests), tangerine juice, apple, avocado, chia seeds, blueberries, strawberries, and non-fat plain greek yogurt. What a treat!
For lunch, I prepared a salad with random ingredients from the fridge (my favorite way to prepare salads). I used a kale base and added green bell pepper, red onion, watermelon, goat cheese, candied walnuts, and a homemade avocado oil balsamic vinaigrette. I also ate a left over potsticker and some cabbage leftover from last night’s dinner (sadly, most of the potstickers were all gone!) and additionally made black rice to put on top of the salad. An overall very satisfying lunch!
I didn’t do too much in the afternoon. I drank a lot of Jasmine Green Tea, cleaned up the kitchen and then started the show Orange is the New Black. Most of my friends are hooked to the show, and I wanted to see what everyone was talking about! I watched one episode before leaving for Body Combat and will likely watch another before bed tonight.
Like always, Body Combat was high energy and so much fun. I love working out next to my mom 🙂 One of my favorite things about being back home is being able to go to the gym with her. I had thought about not going to the gym today since I am trying to taper, due to the half-marathon coming up in 11 days! However, the class is very fun (great music, wonderful people) and I would have had FOMO (fear of missing out), so I just had to go!
Dinner was basically prepared by the time we got home, which was great because I was hungryyy. I ate a plum before combat because my stomach was growling and was definitely ready for dinner upon driving home. My mom had prepared soy meatballs with vodka sauce and my dad made us corn on the cob and guacamole. Have I explained that our family loves avocado? I basically have some form of avocado 2 out of my 3 main meals of the day, sometimes at every meal. It’s a staple of the Moscoso diet 🙂 We also ate black rice as I made the entire bag of it earlier in the day. The picture shows one serving, but I ate more rice and guacamole. I’ll likely eat watermelon soon for dessert!
Another wonderful Zumba instructor, Kitty, is allowing me to teach a song in her class tomorrow! I’m so grateful she is doing that for me and I’m also very excited. I plan on teaching the same routine I taught on Tuesday, but plan on teaching a different one (or two) next week! Going to spend some time later tonight preparing, and then I’m going to relax 🙂 I only have another three and a half weeks of vacation and I’m going to milk them as long as I can!!
