A great end to a great day and PANCAKES!

Good Morning!

Last night we ran our fitness test. We usually run in the mornings so yesterday’s 300yrd shuttles were a bit of an evening wake-up call if you will. See, when you run in the morning, your legs are fresh from sleeping the night before, but after a day on our feet at work and camp, we felt a bit more fatigued. Although our legs felt like cement blocks while we ran up and down the field, we were still able to make it in the allotted time which was a good sign. After running the test we hung out at the field and stretched for a bit with our friend Peyton and then played some soccer. Jess jumped in goal and Less, Peyton, and Lizzy (two other teammates) all took shots. After practicing and playing around for a bit we met up later and played Scattergories for a couple of hours. It’s such a fun game!!!

For dinner Less ate a stuffed red bell pepper that Lizzy made which had a ground turkey, brown rice and tomato filling with a side of broccoli. For dessert she mixed a frozen banana with a bit of plain greek yogurt. ImageImage

Jess had a salad that she bought from Crema Cafe in the square with roasted fennel, cucumber, a bit of orange, and a scoop of tuna. For dessert Jess made what she would call a “healthier” banana cream pie. In a bowl she combined 1/2 cup of plain 0% greek yogurt, one graham cracker sheet and half of a banana. ImageImage

This morning we woke up a little later than usual. We decided not to run today because our legs were still pretty heavy from the 300’s yesterday so instead we lifted. However, after lifting Jess suggested a quick treadmill interval workout just to finish off the routine.

For breakfast this morning Jess made herself a bowl of oats with Wild Squirrel Sneaky Cinnamon Peanut Butter. There was a perfect amount of cinnamon raisin “kick” to the peanut butter which sweetened it up a big. Jess really liked it!Image

She combined 3/4 cup of TJ’s rolled oats and water and first cooked that in the microwave. She then mixed in half of a super ripe banana, 1/2 tbs of chia seeds, a bit of brown sugar and about 1/4 of a cup of unsweetened vanilla almond milk. Topped with Wild Squirrel.Image

Less made Greek Yogurt Pancakes from a recipe she found on pinterest! She topped her pancakes with a bit more greek yogurt, banana, blueberries, maple syrup, and some oatmeal. LOOKED AND TASTED AMAZING! They were really simple to make and really soft and fluffy. It’s always nice finding something that is easy yet still tastes good! This recipe will definitely be repeated in the future.
