Instead of working out this evening, Less napped and Jess watched the women’s USA soccer game against Canada. Less watched it after she woke up. It was so exciting!! Our legs are still feeling dead. Resting is just as important as working out right? We should be back on schedule tomorrow morning.
Tonight we made a meal that Less had been wanting to make for a while: roasted vegetables!! Roasted/grilled vegetables are one of Less’ favorite dinner meals. We broiled a red bell pepper, mini zucchini, garlic, a red onion, a white onion, yellow squash and portabella mushrooms! Oh my goodness they were amazing! All we did was cut the veggies up and put them on a cookie sheet covered with aluminum foil. Then we added a little olive oil, salt and pepper. That’s it! Then we put them in the oven for about 20 min. We didn’t really keep track of the time that well, but we took them out when they were fully cooked, but still had a little crunch to them.
We had also planned on cooking carbs (whole wheat pasta and Isreali Couscous) to eat with our vegetables, but we were so hungry that we immediately ate our vegetables after they came out of the oven. Soon after finishing our first course, we each began cooking our pasta and couscous. Jess made the pasta and topped it with tomato sauce and goat cheese. Less made herself couscous and ate it with a small piece of chicken parm that Lizzy had made. What a delicious meal!

We are now (Lizzy included) making zucchini bread for tomorrow morning! Tonight was really all about cooking in the kitchen.
