Sleeping in was nice but even with the extra few hours we are still tired from the weekend. After camp, Jess rushed home to make a quick lunch before heading off to her internship. She hasn’t gone food shopping yet for the week so she put together a yogurt bowl with things she had in the fridge and pantry. She started with a base of plain greek yogurt (always on hand), blueberries, blackberries, a few slices of strawberry, a few bits of Kashi Cinnamon Harvest and a sliver of banana bread that her roommate Caroline made. Jess was clearly in a “breakfast” mood still at lunch. Less went in the completely opposite taste direction and put together a nice savory salad. She started with romaine lettuce, then added cucumber, shredded carrots, sun dried tomatoes, goat cheese, tomatoes, chickpeas, peas and balsamic vinegar. This can definitely be considered a salad beast. Hearty and healthy!
Jess is going to go food shopping later and we are going to make roasted vegetables to accompany whatever we prepare for dinner.
