Though we both had to pack a lunch because we had work, we still ate nice fresh lunches! It’s always so nice to eat a meal that you find truly satisfying. That was especially the case for us today!
Less ate in Annenberg dining hall; however, she brought with her a few (actually several) ingredients to make her own lunch. Good thing too because the entrees weren’t looking too tasty. She brought with her goat cheese, plain sun dried tomatoes (not the kind sitting in oil), an avocado, garlic hummus, raspberries, blueberries, and pesto made by none other than Less and Jess’ teammate Lizzy. From the dining hall, she got two slices of 100% whole wheat bread, chickpeas, and beets. Less spread hummus on one slide of bread, and pesto on the other. Then she cut up half an avocado and then added goat cheese and sun dried tomatoes. Then she put it in the panini maker! She ate her fruit and chickpeas and beets on the side.What a delicious lunch! Jess, on the other hand, ate a freshly made salad that she just bought this morning from Trader Joe’s (our favorite grocery store!). She ate the SUPER Spinach Salad which included spinach (of course), chickpeas, edemame, cranberries, pumpkin seeds, quinoa, carrots, and a carrot ginger miso dressing. Yum yum!
