Hello! It’s Jess!
Yesterday was my favorite day on the island by far, but it went by so fast! I slept in until about 7:00am which is pretty good, and went downstairs to figure out what the plan for the day was. My mom let me know that a masseuse was coming to give massages around 9am, so I hangout with the rest of my family until it was my turn to go. Everyone really enjoyed their massages, and by the time we were all finished it was time for breakfast/brunch! I decided that I was going to have an omelet with goat cheese and broccoli and fruit salad on the side. I also enjoyed a piece of multigrain toast for some added crunch. I usually don’t have eggs for breakfast because they don’t always fully satiate my hunger but this omelet held me over for quite a while. After breakfast I felt like I needed to go on a run. After taking a “rest day” on Monday, it was necessary that I went running. I decided on a short run because I didn’t want to miss out on spending time with my family so I did about 3.5 miles in about 26 minutes. I was cruising at about a 7:25 pace. I made it an interval run, so I think that’s why I ended up running at that pace. I felt so much better after my run! When I got back I thought we were going to go on some adventure around the island but we decided to just hangout, go in the pool, take in the sun, and relax at the house. Around 3:00pm I got hungry and had a few carrots with hummus, an apple, and a HUGE chunk of watermelon. The watermelon was so juicy! Who cares about size when it comes to watermelon?? I don’t know if its just the environment, but the food here seems exponentially better than the food I am preparing for myself back at school! Before getting ready for dinner we went on a bike ride along the beach and past town. It was really beautiful and my aunt and mother enjoyed the extra workout. When we got back to the house everyone showered and got ready for dinner. We had salmon which was prepared with a mustard seed honey and mint coating, fingerling potatoes, and a spinach salad made with goat cheese, walnuts, red onions and strawberries. Everything was so fresh and so good. I refilled my plate with the salad about three times.
