Gourmet salads

Good evening! Pick-up was cancelled today due to rain and possible storms, so I enjoyed the afternoon and went to the gym to use the elliptical to get rid of some of the lactic acid build up from the sprints this morning.

Afterwards, I enjoyed a delightful salad from Broadway Market. This was my first time eating a salad from there, though I have admired my teammates salads when they have bought them. I am in love with their salad bar. My salad base consisted of spinach and some other greens. I went to town with the toppings! On top of the spinach I put roasted bell peppers, chicken salad, a couple pieces of strawberry and a few blueberries, cheddar cheese, pecans, walnuts, pepitas (pumpkin seeds), cranberries, chick peas and carrots. I dressed the decedent salad with balsamic vinegar!

While I was enjoying my salad, one of our teammates, Lizzy, was also enjoying a gourmet salad that she made herself. She topped her salad with tomatoes, goat cheese, and avocado (MY FAVORITE!!!) and a raspberry vinaigrette dressing. She also ate corn on the cob and drank a delicious smoothie. Her meal looked so beautiful that I had to share it with you all!

Tonight, I hosted a study break for my 10 students. Usually, we have pizza and/or ice cream because we get unlimited quantities from Noch’s and Lizzie’s, but I wanted to change things up a bit. Change can be good. So instead, I decided to make a fruit salad! Oh my goodness it was amazing. And I got them French vanilla ice cream to eat with their fruit. I restrained myself from the vanilla ice cream. Took a lot of effort. They loved the study break so much that all the fruit and almost all the ice cream was gone by the time they all left! I would call that study break a success 🙂

  1. All the salads looked absolutely amazing! I will make myself an arugula salad with goat cheese, roasted peppers, almonds, tomatoes, carrots, cucumbers, and a balsamic vinegar vinagrette for dinner tonight! You inspired me! 🙂
